Ingredients

Scale

Tofu

  • 14 oz firm tofu, drained, pressed, and cubed

Fresh Vegetables

  • 1 bell pepper, sliced
  • 2 medium carrots, julienned or thinly sliced
  • 1 cup snap peas, trimmed

Noodles

  • 8 oz ramen noodles

Sauce

  • 3 tbsp soy sauce (use vegan-friendly soy sauce if needed)
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup (for vegan option)
  • 2 cloves garlic, grated or minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp sesame oil (plus extra for stir-frying)

Garnishes

  • 2 green onions, thinly sliced
  • 1 tbsp toasted sesame seeds
  • Optional: fresh cilantro or chili flakes for garnish

Instructions

  1. Prepare the tofu: Drain and press the tofu to remove excess moisture. Cut into cubes. Pan-fry the tofu over medium heat in a lightly oiled pan until golden and slightly crispy on all sides, about 6-8 minutes.
  2. Cook the vegetables: While the tofu cooks, chop the vegetables into bite-sized pieces. Stir-fry in a hot pan with a splash of sesame oil until the veggies are tender-crisp and vibrant in color, about 3-4 minutes.
  3. Make the sauce: In a small bowl, whisk together soy sauce, rice vinegar, honey, grated garlic, grated ginger, and sesame oil until well combined. This sauce will bring bold flavor and depth to the dish.
  4. Boil the noodles: Cook ramen noodles according to package instructions until just tender. Drain and set aside, ready to absorb the sauce.
  5. Combine and simmer: Add the prepared sauce to the cooked vegetables and tofu. Toss in the noodles and stir everything together thoroughly. Simmer on low heat for 2-3 minutes to allow noodles to soak up the saucy goodness.
  6. Serve and garnish: Transfer ramen to bowls and top with sliced green onions, toasted sesame seeds, and optional fresh cilantro or chili flakes for extra flavor and a pop of color.

Notes

  • Press the tofu well to ensure a crispy exterior when frying.
  • Don’t overcook the vegetables; aim for tender-crisp to maintain color and crunch.
  • If the sauce is too thick, add a splash of water or vegetable broth to adjust consistency.
  • Use fresh garlic and ginger for the best flavor impact.
  • Toast sesame seeds briefly for extra nutty aroma before garnishing.
