Ingredients

Scale

Sausage and Protein

  • 12 oz smoked sausage (kielbasa or andouille), sliced into bite-sized pieces
  • Optional vegetarian swap: smoked tofu or vegetarian sausage

Pasta

  • 9 oz cheese tortellini (fresh or frozen)
  • Alternative: ravioli stuffed with spinach and ricotta

Vegetables

  • 1 red bell pepper, chopped into chunks
  • 1 yellow bell pepper, chopped into chunks
  • 1 medium zucchini, chopped into chunks
  • 1 cup cherry tomatoes, halved

Seasonings and Oils

  • 3 tbsp olive oil, divided
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste

Garnish (optional)

  • Fresh parsley or basil, chopped
  • Grated Parmesan cheese (optional)

Instructions

  1. Prep the Ingredients: Slice the smoked sausage into bite-sized pieces. Chop the red and yellow bell peppers and zucchini into similar-sized chunks for even cooking. Halve the cherry tomatoes and set all ingredients aside.
  2. Toss with Seasonings: Arrange the sliced sausage and chopped vegetables on a large sheet pan. Drizzle generously with olive oil. Sprinkle with Italian seasoning, garlic powder, onion powder, salt, and pepper. Toss everything together until evenly coated.
  3. Roast the Sausage and Veggies: Place the sheet pan in a preheated oven at 425°F (220°C). Roast for about 15 minutes, stirring halfway through, until the sausage edges are crisp and the vegetables begin to soften.
  4. Add Tortellini: Remove the pan briefly from the oven. Scatter the cheese tortellini evenly around the sausage and veggies. Drizzle a bit more olive oil over the pasta and toss gently to combine.
  5. Finish Roasting Together: Return the sheet pan to the oven and roast for an additional 8 to 10 minutes until the tortellini is tender and lightly golden on the edges, and the cherry tomatoes are blistered.
  6. Garnish and Serve: Sprinkle freshly chopped parsley or basil over the finished dish for a burst of color and herbal freshness. Optionally, add grated Parmesan cheese. Serve warm, scooped onto plates or family-style straight from the pan.

Notes

  • Use fresh or frozen tortellini; adjust cooking time slightly if using frozen.
  • Do not overcrowd the pan to allow even roasting and crispy edges.
  • Cut vegetables uniformly for consistent texture and cooking.
  • Check the tortellini early to avoid overcooking and mushiness.
  • Customize seasoning with your favorite herbs or spices to make the dish your own.
