Ingredients

Scale

Main Ingredients

  • 2 skinless, boneless chicken breasts
  • 2 cups fresh ripe tomatoes, finely diced
  • 1/4 cup fresh basil leaves, chopped
  • 4 oz mozzarella cheese, sliced or shredded
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper, to taste

Instructions

  1. Prepare the Bruschetta Topping: Finely dice the fresh tomatoes and chop the basil leaves. In a bowl, combine the tomatoes, basil, minced garlic, a drizzle of olive oil, balsamic vinegar, and a pinch of salt and pepper. Mix well and set aside to develop flavors.
  2. Cook the Chicken: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the chicken breasts evenly with salt and pepper. Sear the chicken in the hot skillet for 5-6 minutes per side, or until golden brown and the internal temperature reaches 165°F (75°C). Remove the chicken from the skillet and set aside.
  3. Assemble and Melt the Cheese: Lower the heat to medium. Spoon the prepared bruschetta mixture evenly over each chicken breast. Top each with slices or shredded mozzarella cheese. Cover the skillet with a lid and let the cheese melt for 3-4 minutes until bubbly and creamy.
  4. Serve and Enjoy: Once the cheese is melted, remove the skillet from heat. Garnish with extra fresh basil if desired, and serve the Skillet Bruschetta Chicken immediately with your choice of side dishes.

Notes

  • Let chicken sit at room temperature for 15 minutes before cooking to ensure even cooking.
  • Use ripe, juicy tomatoes for the best flavor and texture.
  • Avoid overcrowding the skillet; cook chicken in batches if necessary to get a nice sear.
  • Covering the skillet while melting cheese traps heat and prevents overcooking the chicken.
  • Allow the chicken to rest a few minutes after cooking to retain juiciness.
