Instructions

  1. Prepare the Noodles: Cook your choice of rice or wheat noodles according to package instructions. Drain and rinse under cold water to stop the cooking process and prevent sticking. Set aside.
  2. Sauté Aromatics and Kimchi: Heat 1 tablespoon sesame oil in a pan over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds. Add chopped kimchi and cook for 2-3 minutes until softened and aromatic.
  3. Make the Spicy Sauce: Stir in gochujang and soy sauce into the pan with the kimchi, mixing well to create a smooth, vibrant sauce. Adjust gochujang to your preferred spice level.
  4. Combine Noodles and Sauce: Add the drained noodles into the pan and toss thoroughly to coat evenly with the spicy kimchi sauce. Cook for an additional minute to meld the flavors.
