  • 1/2 cup ricotta or cream cheese
  • 1/2 cup grated mozzarella or cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Prepare the Dough: Activate yeast by dissolving it in warm milk or water with a pinch of sugar. Once it becomes bubbly and frothy, combine with flour, salt, and olive oil or melted butter. Knead the mixture until smooth and elastic. Cover and let it rise in a warm place until doubled in size, about 1 to 1.5 hours.
  2. Prepare the Filling: While the dough rises, sauté the chopped fresh spinach in olive oil over medium heat until wilted and most moisture has evaporated. Allow to cool slightly, then mix spinach with ricotta or cream cheese and grated mozzarella or cheddar. Season with salt and pepper to taste.
  3. Assemble the Rolls: Roll out the risen dough on a floured surface into a large rectangle. Spread the spinach and cheese filling evenly over the dough. Carefully roll the dough tightly into a log shape, sealing the edges. Cut the log into equal portions to form individual rolls.
