Ingredients

Oat Base

  • Rolled oats – 2 cups
  • All-purpose flour – 1 cup
  • Brown sugar – 3/4 cup
  • Butter (melted) – 1/2 cup (1 stick)
  • Salt – 1/4 teaspoon

Fudge Layer

  • Sweetened condensed milk – 1 (14 oz) can
  • Unsweetened cocoa powder – 1/3 cup
  • Vanilla extract – 1 teaspoon

Optional Add-ins

  • Chocolate chips – 1/2 cup
  • Chopped nuts (walnuts, pecans, or almonds) – 1/2 cup
  • Dried cherries, cranberries, or raisins – 1/4 cup
  • Cinnamon or espresso powder – 1/4 teaspoon

Instructions

  1. Prepare the oat base: Preheat your oven to 350°F (175°C). In a mixing bowl, combine rolled oats, all-purpose flour, brown sugar, and a pinch of salt. Melt the butter and pour it over the dry ingredients. Mix thoroughly until the texture is crumbly but slightly sticky.
  2. Press the oat mixture: Take about two-thirds of the oat mixture and firmly press it into the bottom of a greased or parchment-lined 9×9 inch baking pan to form a sturdy base layer.
  3. Make the fudge layer: In a saucepan over low heat, combine sweetened condensed milk, unsweetened cocoa powder, and vanilla extract. Stir continuously until the mixture is smooth, glossy, and well blended.
  4. Add the fudge layer: Pour the fudge mixture evenly over the pressed oat base. Use a spatula to spread it out evenly, covering all edges completely.
  5. Top with remaining oat mixture: Sprinkle the leftover oat mixture evenly over the fudge layer. Gently press down to adhere without flattening the fudge beneath. Optionally, sprinkle chocolate chips on top before baking.
  6. Bake and cool: Bake in the preheated oven for 25 to 30 minutes, or until the top is lightly golden and firm to the touch. Remove from oven and let cool completely in the pan before cutting into squares.

Notes

  • Use fresh rolled oats for the best texture and flavor.
  • Allow bars to cool completely before slicing to maintain neat edges and ideal texture.
  • Press the oat base firmly into the pan to prevent crumbling after baking.
  • Constantly stir the fudge mixture on low heat to avoid lumps or scorching.
  • If adding nuts, toast them beforehand to enhance crunch and flavor.
