Strawberry Jello Poke Cake

Strawberry Jello Poke Cake

Strawberry Jello Poke Cake is a simple and refreshing dessert combining moist white cake, vibrant strawberry gelatin soaked into the cake, and a creamy whipped topping. Perfect for any occasion, this colorful and flavorful treat offers a delightful fruity burst and tender texture in every bite.

Ingredients

Scale

Cake Base

  • 1 box white cake mix (plus ingredients called for on the box)

Strawberry Jello Mixture

  • 1 package (3 oz) strawberry Jello powder
  • 1 cup boiling water
  • 1/2 cup cold water

Topping

  • 1 tub (8 oz) Cool Whip or whipped topping

Instructions

  1. Bake the Cake: Prepare the boxed white cake mix according to package instructions. Pour the batter into a greased 9×13 inch baking dish and bake until a toothpick inserted in the center comes out clean, approximately 25-30 minutes. Allow the cake to cool slightly before poking holes.
  2. Poke the Cake: Using the handle of a wooden spoon or a fork, gently poke holes all over the cake about one inch apart. This allows the strawberry gelatin to seep deep into the cake, keeping it moist and flavorful.
  3. Prepare the Strawberry Jello: In a large bowl, dissolve the strawberry Jello powder in boiling water, stirring until completely combined. Stir in the cold water. Carefully pour the mixture evenly over the poked cake so it can soak into the holes. Refrigerate the cake for at least 2 hours to allow the gelatin to set.
  4. Add the Whipped Topping: Once the Jello has set and the cake is cool, spread a generous layer of Cool Whip or whipped topping evenly over the surface to add a creamy, airy finish.
  5. Chill and Serve: Place the cake back in the refrigerator until ready to serve. Chilling ensures the whipped topping stays firm and flavors meld beautifully for a refreshing dessert.

Notes

  • Use room temperature cake before poking and pouring the Jello for better absorption.
  • Allow enough chilling time for the gelatin to fully set before adding the whipped topping.
  • Poke holes evenly spaced about one inch apart to ensure consistent Jello distribution.
  • Adjust sweetness by reducing sugar in the cake mix or choosing a light whipped topping if preferred.
  • Dip a sharp knife in warm water before slicing for clean, smooth pieces without sticking.
