Instructions

Wrap the dough in plastic wrap and chill for at least one hour to make it easier to handle.
  2. Roll and Cut the Cookies: Roll the chilled dough evenly on a lightly floured surface to about 1/4 inch thickness. Use a round cookie cutter to cut out the base cookies. On half of these, use a smaller cutter (such as a heart or circle) to create the cut-out window for the jam. Carefully transfer the cookies to a parchment-lined baking sheet.
  3. Bake Until Lightly Golden: Bake in a preheated oven at 350°F (175°C) for 10-12 minutes or until the edges are lightly golden. Avoid overbaking to keep the cookies tender. Allow them to cool completely on a wire rack before assembling.
  4. Assemble the Cookies: Spread a generous and even layer of strawberry preserves on the solid cookie bases. Gently place the cut-out cookies on top, aligning so the jam peeks through. Dust the tops with powdered sugar to finish the classic look.
