Ingredients

Scale

Main Ingredients

  • 46 boneless, skinless chicken thighs
  • 1 packet ranch seasoning mix (about 1 oz)
  • 1 packet gravy mix (about 1 oz)
  • 1/2 cup (1 stick) unsalted butter, sliced
  • 56 pepperoncini peppers, whole

Instructions

  1. Prepare the Chicken: Rinse and pat dry the chicken thighs to ensure a clean surface which helps the seasoning stick better.
  2. Layer Ingredients in Crockpot: Place the chicken at the bottom of the crockpot. Sprinkle the ranch seasoning and gravy mix evenly over the chicken. Dot slices of butter on top and arrange the pepperoncini peppers around and on the chicken.
  3. Slow Cook: Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is tender and falling apart.
  4. Finish and Serve: Use two forks to shred the chicken directly in the crockpot, mixing well to coat every bite with the sauce. Serve hot with your choice of sides.

Notes

  • Choose dark meat: Chicken thighs stay juicier than breasts during slow cooking.
  • Don’t skip the butter: It’s essential for rich, melt-in-your-mouth texture.
  • Drain excess liquid: To thicken sauce, remove the lid at the end and cook on high for 15 minutes.
  • Use fresh pepperoncini juice: Adds brightness and flavor—don’t discard it.
  • Let it rest: Allow the cooked chicken to sit a few minutes to absorb more flavor before serving.
