Instructions

  1. Prepare the Wet Ingredients: Cream the softened butter with sugar until light and fluffy. Beat in eggs one at a time, then add mascarpone cheese and vanilla extract and mix until smooth and creamy.
  2. Mix the Dry Ingredients: In a separate bowl, whisk together the flour, unsweetened cocoa powder, espresso powder, and salt. This provides structure and deep coffee-chocolate flavor.
  3. Combine Wet and Dry: Gradually stir the dry ingredients into the wet mixture until just combined. Avoid overmixing to keep cookies tender and soft.
  4. Optional Marsala or Coffee Liqueur: Fold in one tablespoon of Marsala wine or coffee liqueur for an elegant boozy note reminiscent of traditional tiramisu.
  5. Shape and Chill: Scoop uniform balls of dough onto a parchment-lined baking sheet. Chill in the refrigerator for at least 30 minutes to solidify the dough and help maintain cookie shape.
  6. Bake and Cool: Bake cookies at 350°F (175°C) for 12 to 15 minutes until edges are set but centers remain soft. Let cool completely on the baking sheet before transferring to a rack.
  7. Finish: Dust cooled cookies generously with powdered sugar. Optionally, add a light sprinkle of cocoa powder for classic tiramisu presentation.
