Crust
- 1 1/2 cups graham cracker crumbs
- 6 tablespoons unsalted butter, melted
Filling
- 24 ounces cream cheese, softened
- 3/4 cup granulated sugar
- 3 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream or sour cream
- 3–4 Twix bars, chopped
Toppings
- Chocolate ganache or melted chocolate, for drizzling
- Caramel sauce, for drizzling
- Additional chopped Twix bars, for garnish
- Prepare the crust: In a mixing bowl, combine graham cracker crumbs and melted unsalted butter. Press this mixture firmly into the bottom of a springform pan to create an even base. Chill it while preparing the filling for a sturdy crust.
- Make the cheesecake filling: Using a stand mixer or hand mixer, beat cream cheese until smooth and creamy. Gradually add sugar and continue mixing until fully incorporated. Add eggs one at a time, mixing gently to avoid over-beating. Stir in vanilla extract and heavy cream or sour cream until the mixture is silky smooth.
- Add Twix pieces: Fold chopped Twix bars gently into the cream cheese mixture, ensuring the pieces are well distributed without breaking apart too much.
- Bake the cheesecake: Pour the filling over the prepared crust and smooth the top. Bake at 325°F (160°C) for about 50-60 minutes or until the edges are set and the center slightly jiggles. Let it cool gradually to avoid cracks.
- Add toppings: Once cooled, drizzle chocolate ganache and caramel sauce generously over the cheesecake. For added texture, sprinkle more chopped Twix pieces on top before chilling for a few hours or overnight to set perfectly.
Notes
- Use cream cheese and eggs at room temperature to create a smooth, lump-free batter.
- Don’t over-mix the batter to avoid cracks or an airy texture.
- Bake the cheesecake in a water bath by placing the springform pan in a larger pan filled with hot water to prevent cracking.
- Cool the cheesecake gradually by leaving it in the oven with the door slightly open before refrigerating.
- Use high-quality Twix bars for the best chocolate and caramel flavor.
