Ingredients

Dry Ingredients

  • All-purpose flour – 4 cups (divided)
  • Granulated sugar – 1/4 cup
  • Active dry yeast – 2 1/4 teaspoons (1 packet)
  • Salt – 1 teaspoon
  • Cocoa powder – 1/4 cup (for chocolate dough)

Wet Ingredients

  • Whole milk – 1 cup (lukewarm)
  • Unsalted butter – 4 tablespoons (softened)
  • Egg – 1 large (plus 1 egg yolk for egg wash)
  • Vanilla extract – 1 teaspoon (for vanilla dough)

Instructions

  1. Prepare the Doughs: Activate the yeast by dissolving it in lukewarm milk mixed with a teaspoon of sugar. Meanwhile, sift and divide the flour equally into two bowls. Add cocoa powder to one and vanilla extract to the other. Combine each with the butter, egg, salt, and the activated yeast mixture. Knead each dough separately until smooth and elastic.
  2. First Rise: Place each dough ball in a greased bowl, cover with a clean kitchen towel, and let them rise in a warm spot for about 1 hour or until doubled in size.
  3. Roll and Layer: On a floured surface, roll each dough ball into equal-sized rectangles. Gently layer the chocolate dough on top of the vanilla dough (or vice versa), pressing lightly to adhere without trapping air bubbles.
  4. Cut and Twist: Slice the layered dough into 1-inch wide strips. Twist each strip tightly to create the distinctive two-tone swirl, then shape into spirals or braid as desired.
  5. Second Rise and Bake: Place the twisted strips on a parchment-lined baking tray, cover lightly, and let rise for an additional 30 minutes. Brush each with egg wash (egg yolk mixed with a splash of water) to promote a golden crust. Bake at 350°F (175°C) for 20 to 25 minutes until golden and cooked through.

Notes

  • Roll both doughs to the same thickness to ensure even baking and twisting.
  • Knead each dough just until smooth to maintain a soft texture.
  • Use lukewarm milk to activate yeast without killing it.
  • Cover doughs during rises to prevent drying and crust formation.
  • For a shiny crust, apply egg wash made from egg yolk mixed with a little water.
