Ingredients

Scale

Main Ingredients

  • 2 medium fresh zucchinis, firm and medium-sized
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon fresh herbs (basil, parsley, or oregano), chopped
  • 1 teaspoon lemon juice, freshly squeezed
  • Salt and pepper to taste
  • Parmesan cheese for garnish (optional)

Instructions

  1. Prepare Your Zucchini: Wash the zucchinis thoroughly, then use a spiralizer, julienne peeler, or mandoline to create long noodle-like strands. Aim for uniform thickness to ensure even cooking and consistency.
  2. Remove Excess Moisture: Place the zucchini noodles in a colander, sprinkle lightly with salt, and let them sit for 10-15 minutes. This helps draw out excess water, preventing soggy noodles when cooked.
  3. Sauté the Noodles: Heat olive oil in a large pan over medium-high heat. Add minced garlic and cook until fragrant, about 30 seconds. Toss in the zucchini noodles and sauté for 2-3 minutes, stirring frequently to keep them tender but crisp.
  4. Add Final Ingredients: Once the noodles have softened slightly, stir in halved cherry tomatoes and fresh herbs. Cook for another minute to warm through.
  5. Season and Serve: Remove from heat and squeeze fresh lemon juice over the noodles. Season with salt and pepper to taste, then garnish with freshly grated Parmesan cheese if desired. Serve immediately for the best texture.

Notes

  • Choose firm zucchinis to avoid excess moisture and mushy noodles.
  • Do not overcook; quick sautéing keeps noodles tender-crisp.
  • Salt noodles before cooking to draw out water and maintain texture.
  • Use a spiralizer or julienne peeler for uniform noodles and smooth prep.
  • Add cheese and fresh herbs off heat for the brightest flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days, preferably with sauce stored separately.
  • Avoid freezing zucchini noodles as they release water and become soggy upon thawing.
  • Reheat leftovers gently on low heat for 1-2 minutes; avoid long microwaving to maintain texture.
